Not sure how broad your question is, so I will answer the broadest possible… You want to look into Cel/Toon shading.

if you want to create it in blender then there are youtube tutorials. Look for gibli anine style in blender. I think thats what you looking for. I too don’t know too much abt it. Love to create something with that style.
