Not all food poisoning is live microorganisms. Sometimes they spew toxins into the food that can’t be cooked out.

A good example would be mushrooms. Some are edible, some are not. Some very specific species can be boiled several times to make them edible. In that case, you’re basically washing the toxins and throwing them away with the water.

Bacteria aren’t that different in this regard. Some are edible. Some are pathogens. These are the ones that out there to get you.

Some can’t really be bothered with your body, but they do produce toxins. Even if you kill every bacterial cell and spore, you’re still left with the toxins which can make you sick.
