Rolled Maple Pork Tenderloin
Ingredients:

Butterflied Pork Tenderloin pounded to 1/4" thick

Salt
-
Pepper
-
Italian Seasoning
-
Herbed spreadable cheese
-
Dried Cranberries
-
Cut Dried Apricots
-
Maple Syrup
Instructions:

Add salt, pepper and italian seasoning to both sides of pork.

Spread cheese on one side.

Top cheese with cranberries and apricot chunks.

Roll meat and secure with toothpicks.

Use toothpicks to secure the roll and then place it seam side down on baking sheet.

Bake 375°f for 20 minutes.

Take the pan out of the oven.

Apply maple syrup coating to meat.

Return to oven and cook the meat for 10 more minutes.

Pull the meat out and let it rest for 15 minutes before carving.

This looks good but instead of the dried fruit I’d try some fresh herbs. Maybe dill, thyme, basil, and fresh minced garlic. Yum!
