I finally found some time to figure out my meat grinder. I wanted to start simple so I figured i could try to make chicken nuggets. ended up making about 50 good-sized nuggets.

Thoroughly impressed with the grinder and the breading stayed on the chicken marvelously. better yet (for me) these are gluten-free and grain-free. instead of panko or other breading, i used pork rinds that i blended up into a coarse powder to coat the chicken. I baked these, but i certainly would like to fry them some time.

I am very happy with the result! Especially since it allows me to enjoy something i haven’t had in a long while.

Just with the title and picture it looks more like “shittyfoodporn” haha.

But homemade nuggets are a different story. I sometimes make chicken burgers with a cornflake breading. So much more taste than bought stuff, but lots of work for 3 to 4 people.

I find your idea using pork rinds very interesting, how does it taste?

maybe a subtle taste of a fried porkchop? honestly even if i eat a pork rind normally they taste like nothing. if you can eat pork its is a great and easy substitute because it is so similar to panko

I might try that in the future. Well not sure how easy it is to find pork rinds. Never tried it before

They’re in pretty much every grocery store and gas station in the US. Often labeled chicharones.
